Spiced Lamb Burgers...

It feels like I've been making the same things over and over again for dinner.  Tonight I tried a new recipe for Spiced Lamb Burgers...they are delicious!!  I got the original recipe here.  I modified it a bit as I had some of the spices in ground form and didn't want to go to the expense of purchasing whole seed.  Here's what I did...

Spiced Lamb Burgers with Naan

1 pound ground lamb
1/2 t. cumin
1/2 t. ground coriander
1/2 t. ground fennel
1/2 t. ground pepper
1/2 t. cinnamon
1/4 t. cayenne
1 1/2 t. paprika
1 garlic clove, finely crushed
1 t. salt
Naan (I purchased in grocery store)

Mix all together and allow to sit at least 1 hour to combine spices.
When ready, cook on grill or George Foreman grill (this is what I have) until done.

Spiced Yogurt

1 c. plain Greek yogurt
1/2 t. ground cumin
1/2 t. ground coriander
crushed garlic
a few mint leaves, chopped
pinch of salt

Brush the naan with olive oil, wrap in foil, and put in a warm oven to heat through.  Layer the naan with some of the spiced yogurt and the burger.  I added some lettuce, cherry tomatoes, cucumber slices, and feta cheese.  Served with oven roasted potatoes.  It was delicious!!

My Friday...

Honor and I woke up this morning to 4 inches of snow.  What was so odd about this snow is that absolutely no one I've spoke to was expecting it.  I watched the news last night before  I went to bed and even the weatherman didn't mention it.  I had errands to run after work today so I drove to school.  I didn't have any problems in the snow and I think that's because it was a bit slushy underneath so my tires were able to grab the road.  Here's a picture of the ECSU campus looking out of my office window.  This was taken at around 7:30am.

 The day continued to get better.  Allison, my friend with the farm, brought in 3 dozen fresh eggs that were just laid by her chickens.  I always say my favorite way to eat eggs is in cookies, but I simply could not resist these beauties!!  Look at that green speckly one!!  And the magnificent beige one next to it!  The oddball in the batch, the lone white egg.  Allison says she still doesn't know which chicken is laying those.  And finally, could you not just die over that beautiful blue egg in the bottom right corner?  I'd love to paint a room that color.

 After teaching today and working on some odd projects, I stopped in at the fish monger to pick up some scallops.  It's Lent and so it's fish on Friday.  The shrimp were too magnificent to pass up as well so I picked up 1/2 pound of scallops and 1/4 pound of shrimp.  Look at how perfectly I cooked them!  Thank you, America's Test Kitchen, for my favorite scallop recipe.

There was no way to eat everything so I have half left for lunch tomorrow.  They were the sweetest scallops I've ever had.  Delicious!!!  I love the fish monger I visit.  Everything is local, so both my scallops and my shrimp are from local U.S.A. waters.  I'd rather spend a few more dollars and buy this high quality fish rather than buy cheaper Chinese shrimp!  I'm also so thankful I have the opportunity to make that choice.

A Day on the Farm...

Today I went to my friend Allison's farm for Maddy's birthday party.  I had such a great time!!  Allison and Keith have all kinds of cool animals.  Here's the butt of a big tom turkey...

Ah, beautiful Penny.  Such a beautiful girl.  She was my favorite.  Next time I go out to the farm I need to be sure to take extra carrots and bring some sugar cubes for her.

And then there were the chickens...oh my goodness but they were adorable!!  These big fat chickens were my favorite because they've got feathers on their feet...it's the poultry equivalent to Hobbits!!  From left to right there is Cinnamon, Sugar, and Nutmeg.  The black/white chicken in the back didn't give me her name.

Allison and Keith take great care of their animals.  Their chickens are very well fed and roam the farm.  You can tell the horses are so very loved.  There are also two dogs, Red and Blue, that are adorable.  Apparently Red (the girl) attacked some of the chickens yesterday, killing 11 and there are still 4 missing.  I know Allison was heartbroken.  I just can't imagine coming home to that kind of mess.  She said some were still barely alive and she had to put them out of their misery.  She's a tougher woman than I am.

February Glam Bag

In addition to MyGlam, I have also signed up for Birchbox which basically does the same thing, and I am on the waiting list to sign up for CraveBox.  Cravebox is different in that it isn't make-up.  Instead, last months box included a pedometer, yearly subscription to Prevention Magazine, some face cream, olive oil, and a sweet treat of some sort.  For $30 a month I get three cute-as-can-be packages that arrive full of surprises...for ME!!

My Valentines Day...

Today is Valentine's Day and I bought something really nice for myself.  I started off with two homemade truffles - Mayan Spice and Raspberry.  I will have them after dinner tonight.  I also bought myself a beautiful glass heart pendant.  It makes me so happy!!  I love, love, LOVE heart jewelry!


When Allison came in to work today she had a Valentine's Day present for me from her daughter, Maddy.  Maddy made me this beautiful heart, which I hung on my office door.


Inside was a cute card and homemade dinosaur cookies!!  How perfect are dinosaur cookies for me?!?!  These made me so happy.

Coventry Winter Market

The sun was shining and it was bitter cold outside.  But, I still went to the Coventry Winter Market, and I'm really glad that I did.  Although much smaller than the summer market, there was still a fabulous variety of items.  One vendor had heirloom apples...yum!!


I love the yellow beets!  I need to figure out how to cook them.  I appreciate the imperfect shape of the carrots.  I'd much rather have these than the perfectly straight ones we find in the grocery store.


Oh my...the bread....the delicious, delicious bread!!  Sold out by the time I got to the front of the line.  Thank goodness I snapped this photo when I did.


I did buy these cookies...they are not good.  :(  The pink peppercorn cream cheese spread is to die for!


Oooh...pretty!!  Yes, I bought myself something pretty and something delicious for Valentine's Day.  I had it wrapped up in a pretty box and I'm not going to open it until Tuesday.  I'd tell you what I bought myself but I'm trying to forget so that I'll be surprised on Valentines Day!!  The box does say "Artisan Truffles" though....


Overall, another lovely day!!

Today I Created This...


It came out really pretty even though I made it about 1/2 inch too large.  You can find the instructions for it here.  It was really easy.  The tricky part is at the beginning when you are dealing with 8 feet of thread that really is doing its absolute best to get tangled.  However, once you get going it's a breeze.  I hope you take the time to make one for yourself!

What I've Been Working On...

Been having fun making these washcloths/dishcloths out of 100% cotton yarn.  I've been making about 1 per night.  I think they are so pretty and they are really nice in the shower!  Here's where I got the original pattern from (Pattern).  Don't you think they'd make really cute gifts?
