Peppermint Tea Cookies

Today I tried a new cookie.  I've been craving something baked and sweet over the past few days and these little tea cookies seemed to be simple enough.  These cookies are really delicate and just melt in your mouth, which is exactly what I was craving.  You could make these with just about any kind of "chips" like chocolate chips (use the mini ones if you can find them), cinnamon chips, butterscotch chips, etc.  However, I bought these these Andes Peppermint Crunch baking chips right before Christmas and I wanted to try making these cookies with them (because I am a mint addict!)

Peppermint Tea Cookies

8 oz. butter at room temperature
1/2 cup powdered sugar (AKA confectioners sugar or icing sugar)
Pinch of salt
1 t. vanilla
2 cups all purpose flour
1 cup Andes Peppermint Crunch chips (you could use chocolate chips, cinnamon chips, etc)

Preheat oven to 350 degrees F.  Cream butter and sugar until light and fluffy.  Add in the pinch of salt and vanilla and mix to combine.  With the mixer on low, add in the flour 1/2 cup at a time.  By hand, mix in the peppermint chips.

Shape the cookies into 1-inch balls and place on parchment lined baking sheet.  Bake at 350 degrees F for 10-12 minutes, or until the bottom of the cookie is just lightly browned.  Remove from oven and allow to cool on the baking sheet.  Removing them early will cause them to crumble and break because they are so delicate.  Store in airtight container for up to 2 weeks.  I like to freeze mine so they are off the counter and I'm not tempted to pop one in my mouth every time I pass the container.

Birchbox December 2014

Hello All,

I wanted to share my December Birchbox with you.  Overall I'm pretty pleased with this box. 

The first item was the RUSK Texture Spray.  I like this product a lot.  It smells really nice and holds my hair well.  The only drawback is how forcefully the product comes out of the can!  It actually messes up my hair as I spray it on.  Small issue, but irritating.

Next was the Dr. Jart+ Black Label Detox Beauty Balm.  It goes on smoothly and provides a nice base for my makeup.  I like this product very much and will continue to purchase.

The red item is the Acure Organics Lip Lush in the shade Shmexy.  This is a typical lip gloss but it's got a really funny chemical scent to it.  Overall, not impressed.

The Mirenesse iCurl 24Hr Mascara has not been opened.  I have SO MANY mascaras and black eyeliners that I still have yet to get to.  However, folks on youtube seem to like this product and the wand, which is a slightly bent shape to mimic the shape of the eyelashes.

Finally, I received the SeaRX Moisturizing Anti-Wrinkle Face Cream.  This sample barely had any product in it for being such a large tube.  Seriously, it wasn't even 1/4 full.  It was too small of a sample to really make any assessment about its claim to reduce wrinkles.  Note to companies that provide samples for these boxes:  give us enough stuff to work with!

Overall, not a bad box.

Rimmel Reviews...

Hi Everyone!

Today I'm doing a review on two items I received in my influenster FrostyVoxBox...the Rimmel Scandaleyes Waterproof Kohl eyeliner and the Just Let It Go Gentle Eye Makeup Remover.

So first...the eyeliner.  Liked this a lot!  It goes on smoothly without tugging at the eyelid.  I also like that you can use a lighter touch with this product.  This is a really dark black, which often washes out my blue eyes, so I like to go a bit lighter and make it more of a dark grey color.  This worked perfectly, and true to its name, it stays on all day!!  No flaking or any other product issues often associated with eyeliners.  My hooded eyelids make it difficult to see in selfies, that's for sure, but in addition to using it on my upper eyelids I also smudged it under my eyes.  I like it!

I figured that the make-up remover, which claims to remove waterproof mascara, probably would take off this eyeliner in nothing flat.  Boy was I wrong!!  I always like to test on the back of my hand and what I found was that I really needed to scrub the swatch of Rimmel eyeliner quite hard to get it off.  Not really sure I want to be doing that on my eyelids!  However, the remover did take off my eyeshadow without any problems.

So...my take on these two items.  I give the eyeliner two thumbs-up, and the make-up remover I give one thumb-up and one thumb-down, just because of the issue noted above.

Mid-morning Snack

Ah, how I love vacation time!  I get to tackle all of the things I've been putting off in the academic year.  This morning I finished taking Honor for a walk and was getting ready to start working on a scrapbook project when I thought I should take a little break beforehand.  I had a piece of homemade custard pie (I'll post the recipe later) and a cup of Candy Cane Lane herbal tea by Celestial Seasonings.  The tea is so lovely with a peppermint flavor.  It's a treat for the palate!  What a deliciously wonderful way to start the day!!

My first review is on the Red Vines Fruit Vines Bites - I took these to the movies yesterday and they are absolutely delicious!  They are very flavorful and the texture is soft, which I love because hard licorice is just gross.  I give these two thumbs up!  I'd definitely buy them again.

Tomorrow I'll tell you how I used the thyme.
